Ingredients:
Cold Somen Salad
Try this delicious recipe from the Electric Kitchen!
- 1 package (9 ounces) somen noodles
- 1/4 cup sugar
- 1 cup chicken broth
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons sesame oil
- 1/2 package (7 ounce size) kamaboko (Japanese steamed fishcake), julienned
- 1/4 lb char siu (Chinese sweet roast pork), julienned
- 1/4 lb ham, julienned
- 1 small cucumber, julienned
- 2 cups shredded lettuce
Directions:
- Cook noodles according to package directions; rinse and drain.
- Chill.
- In a saucepan, combine sugar, broth, soy sauce, vinegar, and oil.
- Bring to a boil; lower heat and simmer for 5 minutes.
- Chill.
- To serve, place somen on a large platter.
- Garnish with remaining ingredients.
- Serve with broth mixture.
Makes 6 to 8 servings.

So Delicious! Tried several other recipes but this is the best tasting BROTH; not salty or bland. Thank you!! Love that it tastes yum with your favorite garnishes. I added boiled egg, yellow/orange/red bell pepper, red & green onion, and my fav fried vege fishcake.

Excellent easy recipe! Doesn't seem at all like local, but is very healthy.

Delicious! Super easy weeknight dinner that I can prep ahead. Sauce was on point! Will definitely add this dish to our dinner rotation.
