Christmas Confetti Cookies

Christmas Cookie Exchange - November 1, 1996.

Ingredients:

Christmas Confetti Cookies

  • 1 cup butter or margarine
  • 1 cup sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla or rum extract
  • 2 1/2 cups flour
  • 3/4 cup finely chopped red and green candied cherries
  • 1/2 cup finely chopped pecans
  • 3/4 cup flaked coconut

Directions:

  1. In large bowl of electric mixer, cream butter and sugar.
  2. Add milk and vanilla, beat well.
  3. Stir in flour, candied cherries, and pecans.
  4. Form into 2 rolls, 1 1/2-inches in diameter.
  5. Roll in coconut.
  6. Wrap and chill several hours or overnight.
  7. Preheat electric oven to 375°F.
  8. Slice rolls 1/4 inch thick and place on ungreased baking sheets.
  9. Bake for 12 minutes or until edges are golden brown.

Makes 5 dozen.
