Ingredients:

Chinese-Style Turkey with Barley

  • 2 turkey hind quarters (4 to 5 lb)
  • 2 to 3 tablespoons hoisin sauce (Chinese soybean sauce)
  • 2/3 cup pearl barley
  • 1 can (14 1/2 oz) chicken broth
  • 2 cups water
  • 1 can (8 oz) water chestnuts, chopped
  • 4 dried mushrooms, soaked and sliced
  • 1-inch piece ginger root, sliced
  • 1 star anise
  • 1/2 teaspoon salt

Directions:

  1. Rub turkey with the hoisin sauce.
  2. In a large sauce pot, combine all ingredients.
  3. Cover and bring to a boil; lower heat and cook until turkey is done, about 1 1/2 to 2 hours.
  4. Remove turkey and shred meat.
  5. Return meat to pot.

Makes 8 to 12 servings.
