Chicken Taco Mason Jar Salad

  • 1/2 cup non-fat plain Greek yogurt
  • 1/2 cup taco sauce (may substitute with favorite salsa)
  • 12 ounces cooked diced chicken
  • 1 cup black beans, drained and rinsed
  • 1 cup fresh corn
  • 1 cup shredded Mexican-style cheese
  • 1 cup halved grape tomatoes
  • 4 cups chopped romaine lettuce
  • 4 (16-ounce) wide-mouth jars


  1. In a small bowl, whisk together yogurt and taco sauce until completely combined to create a dressing.
  2. Place an equal amount of dressing at the bottom of each jar.
  3. Divide remaining ingredients among the jars, layering in the following order: chicken, black beans, corn, cheese, tomatoes and lettuce.
  4. Top with lids and refrigerate up to 3-5 days.
  5. To serve, pour jar onto a large plate or bowl and enjoy.

Serves 4.
