Chicken Salad with Paniolo Dressing

6 cups mixed salad greens
1 cup roasted pepper and corn
1/3 cup diced red onion
1/2 cup diced tomatoes
6 oz cooked chicken breast, sliced
1/2 cup shredded jack cheese
1/2 cup shredded cheddar cheese
1/3 cup Paniolo dressing
1 cup tri-color tortilla chips
1/4 cup prepared salsa


On a platter or dish, layer greens, roasted pepper and corn, onion, tomatoes, chicken and cheeses. Drizzle with Paniolo Dressing. Serve with chips and salsa. Makes 1 serving.
