Chicken Salad with Paniolo Dressing

Chicken Salad with Paniolo Dressing

  • 6 cups mixed salad greens
  • 1 cup roasted pepper and corn
  • 1/3 cup diced red onion
  • 1/2 cup diced tomatoes
  • 6 oz cooked chicken breast, sliced
  • 1/2 cup shredded jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup Paniolo dressing
  • 1 cup tri-color tortilla chips
  • 1/4 cup prepared salsa


  1. On a platter or dish, layer greens, roasted pepper and corn, onion, tomatoes, chicken and cheeses.
  2. Drizzle with Paniolo Dressing.
  3. Serve with chips and salsa.

Makes 1 serving.
