Drain pineapple, reserving juice to drink. In a small bowl combine chicken, pineapple, mayonnaise and black pepper. Mix well.
Top each cracker with a teaspoonful of chicken salad. Garnish with chopped nuts if desired. Serves 4.
TIP: Mayonnaise individual packets do not need to be refrigerated unless opened, making it great for an Emergency Preparedness condiment.
