Chicken Pineapple Poppers

Ingredients:

Chicken Pineapple Poppers

  • 1 (8-ounce) can crushed pineapple in pineapple juice
  • 2 (12-ounce) cans fully cooked chunk chicken breasts, drained and flaked
  • 15 mayonnaise individual packets
  • 4 dozen crackers
  • 1/2 cup chopped nuts (preferably unsalted; optional)
  • 1/4 teaspoon black pepper

Directions:

  1. Drain pineapple, reserving juice to drink.
  2. In a small bowl combine chicken, pineapple, mayonnaise and black pepper.
  3. Mix well.
  4. Top each cracker with a teaspoonful of chicken salad.
  5. Garnish with chopped nuts if desired.

Serves 4.

TIP: Mayonnaise individual packets do not need to be refrigerated unless opened, making it great for an Emergency Preparedness condiment.
