Chicken or Pork Adobo
- 3 pounds chicken thighs OR pork butt, cut into 1 1/2-inch pieces
- 1/2 cup apple cider vinegar
- 1/4 cup soy sauce
- 3 cloves garlic; crushed
- 1/4 teaspoon salt
- 1/4 teaspoon peppercorns, crushed
- 1 bay leaf

So excited Hawaiian Electric has this site available. Ever since I left the islands years ago. I truly miss dishes I grew up in the islands (Honolulu). This dish and several others has made its way into my kitchen every month. East Coast, living is wonderful but having these mouth watering recipe available makes it more enjoyable when your so far away! Mahalo,

Favorite adobo recipe so far. I love that you marinate the chicken, then cook in the pot straight from the fridge. I do add a pinch of sugar/sweetner. Tastiest adobo ever, definitely a keeper.

Didn’t have time to marinate chicken for 1-3 hours. And it still turned out delicious. This recipient is a keeper.
