Cheese Truffles

Ingredients:

Cheese Truffles

  • 2 packages (8 ounces each) of cream cheese, softened
  • 1/2 cup sharp cheddar cheese
  • 1/2 cup Monterey Jack cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Dash of cayenne pepper
  • 1/4 cup chopped roasted red peppers
  • 2 green onions, finely sliced
  • 1 cup chopped pecans, lightly roasted
  • 2/3 cup chopped macadamia nuts, lightly roasted

Directions:

  1. In a large bowl combine cheeses, garlic powder, and cayenne pepper.
  2. Use an electric mixer to beat ingredients till well blended.
  3. Divide mixture in half.
  4. Add peppers to half, and onions to remaining half; mix each until blended.
  5. Refrigerate for several hours or until chilled.
  6. Combine chopped nuts and place in a shallow dish; set aside.
  7. Using a small melon baller shape each mixture into 24 1-inch balls; roll in nuts.
  8. Serve with savory crackers or crostini of choice.

Makes about 48 truffles, 24 of each variety.
