Charlotte's Macaroni Potato Salad


Charlotte’s Macaroni-Potato Salad

  • 8 hard-cooked eggs
  • 1/2 pound macaroni, cooked
  • 3 large red potatoes, cooked and cubed
  • 1 tablespoon vinegar
  • 2 cups mayonnaise
  • 1 teaspoon salt
  • 1/2 teaspoon ground seasoned salt
  • 1/2 teaspoon pepper
  • 1 (10-ounce) package frozen peas, thawed and drained
  • Pitted black olives and parsley for garnish


  1. Separate egg yolks from egg whites; mash yolks and chill.
  2. Chop egg whites.
  3. In a large bowl, add eggs, macaroni and potatoes.
  4. Stir in vinegar and salts; chill overnight.
  5. Add egg yolks and remaining ingredients to macaroni mixture; mix gently.
  6. Chill.
  7. Garnish with olives and parsley.

Makes 8 servings.

I clipped this recipe from the insert with my bill a couple of months ago to try. I didn't realize I had clipped the same recipe years ago (found in one of my cook books)from a Hawaiian Electric insert but didn't try it. I finally tried it a couple of weeks ago and it passed the son-in-law taste test with flying colors! My family now wants me to make this every major holiday!
