Ingredients:
Charlotte’s Macaroni-Potato Salad
Try this delicious recipe from the Electric Kitchen!
- 8 hard-cooked eggs
- 1/2 pound macaroni, cooked
- 3 large red potatoes, cooked and cubed
- 1 tablespoon vinegar
- 2 cups mayonnaise
- 1 teaspoon salt
- 1/2 teaspoon ground seasoned salt
- 1/2 teaspoon pepper
- 1 (10-ounce) package frozen peas, thawed and drained
- Pitted black olives and parsley for garnish
Directions:
- Separate egg yolks from egg whites; mash yolks and chill.
- Chop egg whites.
- In a large bowl, add eggs, macaroni and potatoes.
- Stir in vinegar and salts; chill overnight.
- Add egg yolks and remaining ingredients to macaroni mixture; mix gently.
- Chill.
- Garnish with olives and parsley.
Makes 8 servings.

I clipped this recipe from the insert with my bill a couple of months ago to try. I didn't realize I had clipped the same recipe years ago (found in one of my cook books)from a Hawaiian Electric insert but didn't try it. I finally tried it a couple of weeks ago and it passed the son-in-law taste test with flying colors! My family now wants me to make this every major holiday!
