Catalan Spinach

Catalan Spinach

  • 2 bunches spinach
  • 2-4 tablespoons olive oil
  • 1/4 cup shelled pine nuts
  • 1/4 cup raisins
  • 1/4 cup sliced dried apricots
  • Salt and pepper to taste


  1. Thoroughly wash spinach; blanch and drain well.
  2. Squeeze excess liquid and coarsely cut spinach.
  3. In a large skillet on medium heat, add olive oil.
  4. Lightly brown pine nuts.
  5. Add raisins and apricots; toss to coat well.
  6. Add spinach; cook for 3 minutes or until heated.
  7. Season with salt and pepper.

Serves 4.
