Catalan Spinach
- 2 bunches spinach
- 2-4 tablespoons olive oil
- 1/4 cup shelled pine nuts
- 1/4 cup raisins
- 1/4 cup sliced dried apricots
- Salt and pepper to taste

Thoroughly wash spinach; blanch and drain well. Squeeze excess liquid and coarsely cut spinach. In a large skillet on medium heat, add olive oil. Lightly brown pine nuts. Add raisins and apricots; toss to coat well. Add spinach; cook for 3 minutes or until heated. Season with salt and pepper. Serves 4.
