Castilian Pot Roast

Ingredients:

Castilian Pot Roast

  • 3½ to 4 pound, bone-in chuck roast
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 1 teaspoon paprika
  • ½ teaspoon grated lemon rind
  • ¼ teaspoon pepper
  • ¼ teaspoon tarragon

Directions:

  1. Heat oven to 300°F.
  2. Using a knife, cut slashes in roast.
  3. Combine remaining ingredients and rub thoroughly into roast.
  4. In a large pan, brown roast on all sides.
  5. Place roast in the center of a large sheet of heavy foil; seal tightly.
  6. Place in a shallow roasting pan and roast for 3 to 3½ hours.
  7. Skim oil from remaining liquid in foil.
  8. Boil liquid in pan until original amount is reduced in half.
  9. Serve with roast or thicken with flour for gravy, if desired.

Serves 6.
