Breadfruit Patties

Ingredients:

Breadfruit Patties

  • 1 ripe breadfruit
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 teaspoon ground cinnamon
  • Dash of ground nutmeg
  • 1/2 cup cornflake crumbs
  • 1/4 cup vegetable oil for cooking

Directions:

  1. Pare breadfruit, cut into lengthwise quarters, and remove core.
  2. Cut breadfruit into large chunks.
  3. Steam for 1 hour.
  4. Mash breadfruit while hot adding milk, butter, cinnamon, and nutmeg.
  5. Shape into small patties; roll in cornflakes.
  6. Heat oil in skillet; fry patties until golden brown on each side, turning once.
  7. Drain on paper towels.

Makes 8 servings.
