Ingredients:
Bitter Melon and Pork with Black Beans
Try this delicious recipe from the Electric Kitchen!
- 1 teaspoon cornstarch
- 1/2 lb pork, thinly sliced
- 2 tablespoons dau see (Chinese preserved black beans), rinsed and drained
- 2 cloves garlic, grated
- 1-inch piece ginger root, grated
- 2 tablespoons peanut oil
- 2 teaspoons powdered chicken bouillon seasoning
- 1/2 cup water
- 3 large bitter melon, seeded and cut into 1/4-inch slices
- 1 Maui onion, sliced
Directions:
- Sprinkle cornstarch over pork slices; mix and let stand.
- Combine black beans, garlic, and ginger; mash together and set aside.
- Heat oil in skillet; brown pork.
- Add black bean mixture; stir fry for 2 minutes.
- Add chicken seasoning and the water.
- Stir in bitter melon and onion.
- Cover and simmer for 6 minutes or until bitter melon is tender.
Makes 4 servings.

Substituting extra firm tofu for the pork works well. I sprinkled the tofu with corn starch and stir fried it before adding it to the bitter melon.
