Bitter Melon and Pork with Black Beans

Ingredients:

Bitter Melon and Pork with Black Beans

  • 1 teaspoon cornstarch
  • 1/2 lb pork, thinly sliced
  • 2 tablespoons dau see (Chinese preserved black beans), rinsed and drained
  • 2 cloves garlic, grated
  • 1-inch piece ginger root, grated
  • 2 tablespoons peanut oil
  • 2 teaspoons powdered chicken bouillon seasoning
  • 1/2 cup water
  • 3 large bitter melon, seeded and cut into 1/4-inch slices
  • 1 Maui onion, sliced

Directions:

  1. Sprinkle cornstarch over pork slices; mix and let stand.
  2. Combine black beans, garlic, and ginger; mash together and set aside.
  3. Heat oil in skillet; brown pork.
  4. Add black bean mixture; stir fry for 2 minutes.
  5. Add chicken seasoning and the water.
  6. Stir in bitter melon and onion.
  7. Cover and simmer for 6 minutes or until bitter melon is tender.

Makes 4 servings.

Substituting extra firm tofu for the pork works well. I sprinkled the tofu with corn starch and stir fried it before adding it to the bitter melon.
