Beef Luau
- 3 pounds stew meat
- 2 cloves garlic, crushed
- 1 large onion, chopped
- 4 quarts water
- 2 pounds luau (taro leaves)
- 2 tablespoons salt
- Dash of baking soda

In a large saucepan, brown meat and garlic. Stir in onion; cook until clear. Add 2 quarts of the water. Bring to a boil, lower heat, and cook 1 1/2 hours or until meat is tender. Wash luau thoroughly; break off stems and remove fibrous part of stems and veins. Put stems and leaves into a saucepan. Add remaining 2 quarts water, 1 tablespoon of the salt, and the baking soda. Cook until luau is tender, about 30 to 45 minutes; drain. Stir luau and remaining 1 tablespoon salt into meat mixture. Cook 10 more minutes. Makes 8 servings.
