Recipe compliments of Chef Salvo Coppola, instructor at Kapiolani Community College.

Basil Butter

  • 1/2 cup fresh basil, chopped
  • 2 tablespoons chopped shallots
  • 1/2 teaspoon lemon juice
  • 4 ounces butter, room temperature

In a small bowl, mix all ingredients together, using a spatula or wooden spoon, and make in to a paste. Put butter into a piece of plastic wrap and roll to make a log. Refrigerate to solidify. Slice and serve on top of protein or store in freezer. Makes 1/4 cup.

Tip: Basil has delicate leaves, so chop them slowly and carefully or else they will turn black in color.
