Banh Mi (Vietnamese Sandwich)

1 French baguette roll (about 7 inches in length)
1 tablespoon mayonnaise
1 teaspoon shoyu
3-4 slices of your favorite seasoned chicken, beef, pork or tofu
4-5 thin Japanese cucumber slices
3 cilantro sprigs, roughly chopped
3 thin jalapeño pepper slices
1/4 cup (or more to taste) do chua (pickled turnip and carrots)
Preheat toaster oven to 325º F. ;Slit the bread lengthwise and hollow out the insides, making a trough in both halves. Discard the insides or save it for another use, such as breadcrumbs. Toast until lightly crisp; cool for a minute. Generously spread the inside with mayonnaise. Drizzle shoyu on bread. Start from the bottom portion of bread to layer in the remaining ingredients. Makes 1 serving.
