Banana Chai Muffins

Ingredients:

Banana Chai Muffins

  • Cooking spray
  • 4 medium ripe bananas, mashed
  • 1/4 cup melted coconut oil
  • 1/4 cup honey
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cardamom
  • 1 teaspoon all-spice
  • 1/2 teaspoon kosher salt
  • 1 cup dark chocolate chunks

Directions:

  1. Heat oven to 350°F.
  2. Coat muffin pan with cooking spray.
  3. In a large bowl, stir together bananas, coconut oil, honey, eggs, and vanilla until combined.
  4. Mix in flour, baking soda, spices, and salt, until just combined.
  5. Fold in chocolate chunks.
  6. Fill muffin pan and bake for 20 to 22 minutes or until a toothpick inserted into center comes out clean.

Serves 12.
