Avocado Crema

Ingredients:

Avocado Crema

  • 2 medium ripe avocados, about 2 cups
  • 2 tablespoons lemon or lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon white pepper
  • 4 cups of vegetable stock
  • 5 slices crispy bacon, diced
  • 4 sprigs Chinese parsley, chopped
  • 1 stalk green onion, sliced

Directions:

  1. Peel and scoop out the avocado into a large bowl.
  2. Add in lemon juice and mash until smooth.
  3. Add mash to the bowl of a blender.
  4. Add in salt, cumin and pepper.
  5. Add in vegetable stock.
  6. Blend until smooth and silky.
  7. Serve into bowls or cups.
  8. Garnish with bacon, parsley, and green onions.
  9. Enjoy chilled or at room temperature.

Makes 4 servings.
