Peel and scoop out the avocado into a large bowl. Add in lemon juice and mash until smooth. Add mash to the bowl of a blender. Add in salt, cumin and pepper. Add in vegetable stock. Blend until smooth and silky. Serve into bowls or cups. Garnish with bacon, parsley, and green onions. Enjoy chilled or at room temperature. Makes 4 servings.
