Apple-Cranberry Cobbler

Ingredients:

Apple-Cranberry Cobbler

  • 2 cups pared and sliced Granny Smith apples
  • 2 cups cranberries
  • 2 1/4 cups sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup brandy
  • 1/2 lb butter
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • Sugar
  • Vanilla ice cream

Directions:

  1. Preheat electric oven to 350°F.
  2. In a saucepan, combine apples, cranberries, 1 1/4 cups of the sugar, cornstarch, cinnamon, and brandy.
  3. Stirring frequently, simmer until thick and syrupy.
  4. Place in a 13 x 9 x 2-inch baking dish.
  5. In large bowl of electric mixer, cream butter and the remaining 1 cup sugar.
  6. Sift flour, baking powder, and salt; slowly add to creamed mixture and mix until crumbly.
  7. Slowly add milk and stir until just moistened.
  8. Spoon dollops of batter evenly over fruit mixture; sprinkle with sugar.
  9. Bake for 30 to 40 minutes or until golden brown.
  10. Serve with ice cream.

Make 6 servings.
