Portuguese Beef and Onions

Ingredients:

Portuguese Beef and Onions

  • 1 tablespoon olive oil
  • 1 pound beef, thinly sliced
  • 2 large onions, thinly sliced
  • 2 cloves garlic, crushed
  • 1 pound tomatoes, chopped
  • 1 tablespoon chopped parsley
  • 1 bay leaf
  • Salt and pepper to taste
  • Chinese parsley, chopped, for garnish

Directions:

  1. In a large skillet, heat oil.
  2. Add the beef and stir-fry for 2-3 minutes to brown on all sides.
  3. Add onion, garlic, tomatoes, parsley, and bay leaf.
  4. Season with salt and pepper; cover and bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Uncover and continue to boil rapidly for about 5 minutes to reduce liquid.
  7. Garnish with Chinese parsley before serving.

Makes 4 servings.
