Pork Adobo

Ingredients:

Pork Adobo

  • 4 yellow onions, halved and sliced
  • 4 cloves garlic, crushed
  • 1 bay leaf
  • 1 teaspoon black pepper
  • 3-pounds boneless pork shoulder or butt, cut into 1-inch cubes1/2 cup apple cider vinegar
  • 1/2 cup soy sauce
  • 1 tablespoon sugar

Directions:

  1. Spread half of the onions in the bottom of the slow cooker.
  2. Add 2 garlic cloves, bay leaf and pepper.
  3. Arrange the pork in a single layer on top of the onions.
  4. Top with remaining onions and garlic.
  5. Drizzle vinegar and soy sauce over ingredients and sprinkle with sugar.
  6. Cover and cook on HIGH for 4 hours or LOW for 8 hours.
  7. Remove and discard bay leaf before serving.

Makes 8 servings.
