New Kine Banana Lumpia

Ingredients:

New Kine Banana Lumpia

  • 6 sheets frozen phyllo sheets*
  • 3 tablespoons honey
  • 6 firm ripe bananas, peeled
  • 1 1/2 teaspoons apple pie spice
  • Butter-flavored cooking spray

Directions:

  1. Thaw phyllo according to package directions.
  2. Cut phyllo sheets crosswise in halves.
  3. Place sheets on a smooth, dry surface; cover with plastic wrap and a damp towel.
  4. Keep the phyllo covered until needed.
  5. Preheat electric oven 400°F.
  6. Place honey on a plate and roll bananas in the honey.
  7. Sprinkle each banana with 1/4 teaspoon apple pie spice.
  8. For each lumpia, place one half sheet of phyllo on a work surface; spray with cooking spray.
  9. Place another half sheet over the first and spray with cooking spray.
  10. Place a banana on the phyllo, about 1 1/2-inches from the short edge of the phyllo.
  11. Fold the short edge of phyllo over the banana, then fold left and right sides toward center.
  12. Roll tightly toward open edge.
  13. Seal with cooking spray and place edge side down on an ungreased baking sheet.
  14. Repeat until all bananas are wrapped.
  15. Bake for 15 to 20 minutes or until golden brown.
  16. Serve warm.

Makes 6 servings (1 serving = 215 calories, 3 grams protein, 1 gram fat, 51 grams carbohydrates, 3 grams dietary fiber: 6% protein, 90% carbohydrates, 4% fat).

* For healthier eating, use the lowest fat phyllo available.
