Multicooker Split Pea Soup

Ingredients:

Multicooker Split Pea Soup

  • 1/4 cup olive oil
  • 1 large leek, washed and thinly sliced
  • 1 medium onion, finely chopped
  • 3 carrots, peeled and sliced
  • 3 stalks celery, thinly sliced
  • 3 cloves garlic, minced
  • Kosher salt and pepper to taste
  • 1 1/2 cup dried split peas, rinsed and small stones removed
  • 1 cup ham, diced
  • 1 tablespoon fresh thyme
  • 4 cups low-sodium chicken broth
  • 2 tablespoons lemon juice

Directions:

  1. In multicooker pot on sauté setting, heat oil and sauté leek, onion, carrots, celery and garlic.
  2. Season with salt and pepper to taste.
  3. Sauté until vegetables are softened, about 8 minutes.
  4. Add split peas, ham, thyme and chicken broth.
  5. Mix all ingredients together close multicooker lid, set to high pressure, cook for 12 minutes.
  6. When finished, allow pressure to release naturally, remove lid and stir in lemon juice.

Serves 6.

Tip: When closing the lid to your multicooker, make sure that it is in the locked position before starting the pressure cooking.
