Mango Bread

Ingredients:

Mango Bread

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 1/4 cups sugar
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup chopped nuts
  • 2 cups chopped mangoes
  • 3/4 cup salad oil
  • 3 eggs, beaten
  • 2 teaspoons vanilla

Directions:

  1. Preheat electric oven to 350°F.
  2. Grease a 9 x 5 x 3-inch loaf pan.
  3. Sift flour with baking soda and cinnamon into mixing bowl.
  4. Stir in sugar, coconut, and nuts.
  5. Add remaining ingredients and mix well.
  6. Pour into prepared pan and bake for 1 hour and 15 minutes or until done.

Makes 1 loaf.

Made it without the nuts and coconut, and it wasn’t anything to write home about. The loaf itself had a nice flavor, but the mango didn’t really come through that well. Will have to try again with both ingredients to see if that makes a difference.

I made it for my family with/without nuts and they loved it......Using different types of over ripe mangoes makes all so moist.
