Lilikoi Butter

Ingredients:

Lilikoi Butter

  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1/4 cup fresh lilikoi juice (not from concentrate)
  • 4 eggs, beaten
  • 5 tablespoons butter

Directions:

  1. In a small saucepan over medium heat, combine the sugar, lemon juice, and lilikoi juice; stir until sugar is dissolved.
  2. Whisk a little of the lilikoi mixture into the eggs to temper it, then return the whole mixture back to the saucepan, stirring constantly over medium-low heat until the mixture is thick enough to coat the spoon.
  3. Remove from heat, add butter, and stir until melted.
  4. Pour into sterilized jars and seal.

Makes about 1 1/2 cups.

140 calories, 7 g total fat, 3.5 g saturated fat, 80 mg cholesterol, 70 mg sodium, 18 g carbohydrate, 0 g fiber, 17 g sugar, 2 g protein
