Kipuka Cafe's Shrimp Curry with Ulu

Ingredients:

Kipuka Cafe's Shrimp Curry with Ulu

  • 1 medium size ulu (breadfruit)
  • 1 pound onions, diced into 1-inch pieces
  • 1 pound celery, diced into 1-inch pieces
  • 1 pound carrots, diced into 1-inch pieces
  • 6 cups water
  • 1 box (8.4 ounces) prepared Japanese curry mix
  • 2 pounds shrimp (16-20 per pound), shelled and deveined

Directions:

  1. Remove top and bottom from ulu.
  2. Cut into 4 wedges; steam for 20 minutes in a large pot.
  3. Remove rind and cut into 1-inch pieces; set aside.
  4. In a large pan, saute onions, celery, and carrots.
  5. Add water and curry mix.
  6. Bring to a boil; reduce heat to medium low and simmer for 10 minutes.
  7. Add shrimp; simmer until shrimp has turned bright orange.
  8. Add ulu and serve.

Makes 6 servings.
