Ingredients:

Instant Pot Kalua Pig

  • 3-4 pounds boneless pork butt, cut into 3 equal pieces
  • 1 tablespoon liquid smoke
  • 1 tablespoon Hawaiian salt
  • 1 cup water

Directions:

  1. Pierce pork pieces on all sides with a fork.
  2. Season all sides with liquid smoke then with the salt.
  3. Add water and pork to the Instant Pot.
  4. Cover and turn on the Instant Pot on Pressure Cook.
  5. Set time for 90 minutes.
  6. When time is up, let the pressure naturally release until release button pops up.
  7. Shred pork with a fork while in Instant Pot as it soaks up juices.

Serves 8.

Alternative: After pork is shredded, leave Instant Pot on Warm and add chopped cabbage for a few minutes until cabbage is wilted for kalua pig and cabbage.

THE best recipe for kalua pig I've ever made. Follow the recipe exactly. It will come out just perfect. I was wondering whether I would need more liquid smoke than specified. Nope. It was just the right amount. Had I added more, I would've ruined the taste.
