Green Tea and Azuki Bean Tiramisu

Ingredients:

Green Tea and Azuki Bean Tiramisu

  • 5 teaspoons matcha powder, divided (1 teaspoon extra for dusting, optional)
  • 1/2 cup hot water
  • 1 cup mascarpone cheese
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipping cream
  • 24 lady fingers
  • 1 cup prepared (sweetened) azuki beans

Directions:

  1. Dissolve 3 teaspoons matcha powder in hot water to make a syrup; let cool.
  2. In large mixing bowl, whisk mascarpone with powdered sugar and vanilla.
  3. Add 2 teaspoons matcha and whisk until blended; set aside.
  4. With an electric mixer whip the cream to a stiff peak.
  5. With a spatula, fold in 1/3 of the whipped cream to the mascarpone mixture.
  6. Fold in the remaining whipped cream; set aside.
  7. Place lady fingers in a single of a 9 x 13 inch glass baking pan.
  8. Generously brush each lady finger with matcha syrup.
  9. Evenly spread 1/2 cup of the azuki beans over the lady fingers; cover with 1/2 of the cream mixture; repeat.
  10. Cover with plastic wrap and refrigerate for at least 4 hours.
  11. Cut into pieces and dust with optional matcha powder before serving.

Makes 12 servings.
