Fried Taro Patties

Ingredients:

Fried Taro Patties

  • 8 ounces taro, peeled and grated
  • 4 water chestnuts, peeled and finely chopped
  • 1 stalk green onion, chopped
  • 6 ounces shrimp, deveined and finely chopped

Marinade:

  • 1/3 teaspoon of garlic powder
  • A few drops of sesame oil
  • A dash of pepper
  • 1 tablespoon corn starch

Seasoning:

  • 1/2 teaspoon salt
  • A dash of pepper
  • 2-3 tablespoons corn starch

Directions:

  1. Heat up the oil for deep frying.
  2. In a large bowl, combine taro, water chestnuts and green onion.
  3. In small bowl, combine all marinade ingredients.
  4. Mix shrimp with marinade mixture and pound into a paste.
  5. Mix in seasoning with taro mixture.
  6. Stir until mixture is sticky and doesn't fall apart.
  7. Form into small patties.
  8. Deep fry until golden brown.

Makes 6 patties.
