Ingredients:

Energy Bars

  • 2 1/2 cups crisp rice cereal (such as Rice Krispies)
  • 1 cup quick oats
  • 3/4 cup toasted sesame seeds
  • 1 package (10 ounces) marshmallows
  • 1/2 cup peanut butter
  • 1/4 cup butter or margarine
  • 1/4 cup peanuts
  • 1/2 cup raisins (or other dried fruit such as cranberries, blueberries, or diced apricots)

Directions:

  1. Grease a 13 x 9 x 2-inch pan.
  2. In a saucepan or skillet, combine rice cereal, oats and sesame seed; toast over medium heat a few minutes.
  3. In a large saucepan, combine marshmallows, peanut butter and butter; melt over low heat.
  4. Stir in cereal mixture, peanuts and raisins.
  5. Press firmly into prepared pan.
  6. Cool and cut into bars.

Makes 36 bars.

Approximate Nutrient Analysis per serving:
110 calories, 6 g fat, 2.5 g saturated fat, 50 mg cholesterol, 60 mg sodium, 13 g carbohydrate, 1 g fiber, 6 g sugar, 2 g protein

Thank you for sharing this recipe! This is the one I made with my English teacher who was from Hawaii and I have been trying to find the recipe for!! I tried some other energy bar recipe because this is the best! Now I have printed it out so I can make anytime. They are gone so quickly when I make them. Only down side is to clean up the bowl with sticky melted marshmallows. Lol

Very good! Used a 7 1/4 x 11 pan for thicker bars, also easier to flatten evenly.
