Cool Avocado Mango Ceviche

Ingredients:

Cool Avocado Mango Ceviche

  • 1 pound of fresh Mahi Mahi (or other fresh firm-fleshed white fish such as red snapper or marlin),
  • skinned, deboned and cut into ½-inch cubes
  • ½ sweet red onion, finely diced
  • 1 ½ cups cherry tomatoes, seeded and chopped
  • 2 ½ teaspoons kosher salt
  • ½ teaspoon dried oregano
  • 1 small jalapeno pepper, seeded and diced (optional)
  • ¾ cup fresh-squeezed lime juice
  • ¼ cup fresh-squeezed lemon juice
  • ¼ cup finely chopped cilantro (Chinese parsley)
  • 1 avocado cut into ½-inch cubes (approximately 1 cup)
  • 1 small mango, cut into ½-inch cubes (approximately ½ cup)

Directions:

  1. In a non-reactive casserole dish (such as glass or ceramic), place the fish, onion, tomatoes, salt, oregano and jalapeno.
  2. Pour lime and lemon juice over mixture.
  3. Stir all ingredients gently until combined.
  4. Let sit covered in the refrigerator for 1 hour, then stir.
  5. Let sit for 1½ hours more in the refrigerator (a total of 2½ hours), allowing flavors to blend.
  6. The fish should change from translucent to whiter in color when finished.
  7. Drain marinade and gently mix in cilantro, avocado and mango.
  8. Serve with warmed tortillas for ceviche tacos or with tortilla chips.

Makes 4 to 6 servings.

TIP: Avocado will ripen on its own in 1-3 days. However, if you need to use it right away there's a faster way to soften the fruit. Prick avocado several times with a fork and place it on a microwavable plate lined with paper towels. Place the entire dish in the microwave and set the power to medium. Cook for 30 seconds, check the avocado. If it still isn't soft enough to eat, microwave for another 30 seconds. Repeat steps until the fruit is the desired softness.
