Chocolate Tofu Mousse

Ingredients:

Chocolate Tofu Mousse

  • 8-ounces unsweetened baking chocolate, chopped
  • ½ cup granulated sugar
  • 11/2 cups soy milk
  • 1/2 vanilla bean, scraped (or 1 teaspoon vanilla extract)
  • 10-ounces Silken tofu, drained
  • 1/4 cup raspberries
  • 1/4 cup blueberries

Directions:

  1. Place chopped unsweetened chocolate in a medium sized mixing bowl.
  2. In a saucepan, combine sugar, soy milk and scraped vanilla bean.
  3. Bring to a boil; pour over chocolate.
  4. Let stand 1 minute.
  5. Remove vanilla bean and whisk until smooth.
  6. In a blender, process drained silken tofu until creamy (about 10 seconds).
  7. Add chocolate mixture; blend until smooth (20-30 seconds).
  8. Spoon into 5 individual bowls.
  9. Refrigerate until mousse is firm (1 hour).
  10. Before serving, divide 1/4 cup each raspberries and blueberries among bowls.

Makes 5 servings.
