Chinese Black Bean Chicken

Ingredients:

Chinese Black Bean Chicken

  • 2 tablespoons vegetable
  • 1 teaspoon sesame oil
  • 1 pound boneless-skinless chicken, chopped into small pieces
  • 4 tablespoons Chinese black bean paste
  • 1 head garlic, peeled and halved
  • 1/2 green bell pepper, chopped into small pieces
  • 1/2 red bell pepper, chopped into small pieces
  • 2 teaspoons dried chili pepper flakes
  • 2 teaspoons vinegar
  • 1 tablespoon low-sodium shoyu
  • Salt to taste

Directions:

  1. Heat wok with oil on medium heat.
  2. wok is hot, add sesame oil.
  3. Stir in black bean sauce and garlic.
  4. Add chicken and stir-fry until cooked.
  5. Add red and green bell pepper and stir-fry.
  6. Add remaining seasonings and cook for 3-5 minutes.

Makes 4 servings.
