Baked Papayas with Chicken Curry

Ingredients:

Baked Papayas with Chicken Curry

  • 2 tablespoons butter or margarine
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon minced ginger root
  • 1 1/2 tablespoons flour
  • Dash of salt
  • 2 to 3 teaspoons curry powder
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • 2 cups cubed cooked chicken
  • 2 firm ripe papayas, halved and seeded
  • 1/4 cup flaked unsweetened coconut
  • Chutney
  • Lime slices for garnish

Directions:

  1. Preheat electric oven to 350°F.
  2. In a saucepan, heat butter; add onion, garlic, and ginger.
  3. Sauté for 5 minutes.
  4. Add flour, salt, and curry powder; mix well.
  5. Gradually stir in broth and milk; cook until thickened.
  6. Stir in chicken; spoon into papaya halves.
  7. Top with coconut.
  8. Bake for 10 to 15 minutes.
  9. Serve with chutney.
  10. Garnish with lime slices.

Makes 4 servings.
