Spinach and Portuguese Sausage Quiche

Ingredients:

Spinach and Portuguese Sausage Quiche

  • 6 large eggs, beaten
  • 1 1/2 cups heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chopped fresh baby spinach, packed
  • 1 1/2 cups cubed Portuguese sausage
  • 1 1/2 cups shredded gruyere cheese
  • 1 (9-inch) uncooked pie crust, fitted to a 9-inch glass pie plate

Directions:

  1. Heat oven to 375°F.
  2. In a large bowl, whisk together eggs, cream, salt, and pepper.
  3. Layer the spinach, Portuguese sausage, and cheese on the bottom of the pie crust, then pour the egg mixture on top.
  4. Bake for 45-55 minutes until the egg mixture is set.
  5. Cut into 8 wedges.

Serves 8.
