Build Your Own Bruschetta Bar

Ingredients:

Build Your Own Bruschetta Bar

  • 2 large (1 pound) Italian loves, sliced 1/2-inch thick
  • 1 cup extra virgin olive oil
  • Sea salt to taste
  • One head of garlic, halved
  • Tomato and Basil Spread (see recipe below)
  • Marinated Eggplant Spread (see recipe below)
  • Marinated Zucchini Spread (see recipe below)
  • White Bean Spread (see recipe below)
  • Spreads: homemade pesto, tapenade, sauteed mushrooms, or caramelized onions
  • Toppings: prosciutto, salami, fresh mozzarella, or arugula

Directions:

  1. Brush the sides of each bread slice with olive oil, using a pastry brush.
  2. Place slices on a grill pan and toast for about 2 minutes per side, over medium heat.
  3. Watch carefully so the bread doesn't burn.
  4. Remove from grill, and rub with cut side of a head of garlic and sprinkle with salt.
  5. Serve with a selection of spreads and toppings.

Makes 10 servings.
